Underscoring the beginning section of Expiration Date, "Red Bread" is written in a big-band style, and utilizes the blues scale in its main melodic material.

The track opens with a flute introduction, the serenity of which is soon interrupted by the brass section section. Low brass falls into their own rhythm, playing steadily over a highly syncopated, funk-based groove played by drumset, bongos, and electric bass. A trumpet crescendo leads into a melody utilizing almost primarily notes of the C minor blues scale, played by tenor and baritone saxophone, and trombones 1, 2, and 3. Bass trombone and tuba hold down punctuation on the bass line, and trumpets continue to crescendo on their own above the melody. Flute is then introduced again for a "bluesy, aggressive" solo, playing above the established melody. Following the flute solo, a short bridge leads into a tenor saxophone solo, helping to carry the band to the conclusion. Tenor saxophone harmonizes with the flute to end with the rest of the ensemble on a G.
